What role do vitamins play in your health?
Vitamins are micronutrients that work with enzymes ensuring that all bodily processes are carried out properly. Vitamins also regulate metabolism and assist in releasing needed energy from your digested foods. There are two kinds of vitamins, fat-soluble and water-soluble. Fat-soluble vitamins only dissolve in fat with the excess being stored in the body, typically in the liver or fat cells. Fat-soluble vitamins include vitamins A, D, E and K. Water-soluble vitamins dissolve in water and any excess is easily eliminated from the body. Normal diets full of foods that contain many vitamins won’t cause toxicity issues, but mega doses of fat-soluble vitamins can lead to toxicity.
Whole, fresh, raw foods are a great source to get needed enzymes as well as needed vitamins and minerals. You'll find that you can get all the nutrients you need from a vegetarian, vegan or raw vegan diet, with vitamin B12 being the exception. There are only a couple non-animal sources for vitamin B12, so unless you get this vitamin from those sources, it is best to supplement it.
